DONGWON TUNA & SASHIMI SPECIAL

All Sashimi Special will be served with 12 to 13 side dishes starting with smooth porridge, variety of cold and hot dishes including roll, sushi and fresh seafood like sea cucumber, sea squirt, herring roe, scallop, oyster and raw shrimp marinated with our special soy sauce. Albap, rice with different type of roe on a hot stone bowl and spy seafood stew will be served to conclude this feast.

You can experience unlimited tuna sashimi including premium cuts. We have 5 different level and each level comes with different variety of level of fattiness and premium cuts.

*3 to 7 years old children get 50% off discount

Tuna Special is served different options for tuna “fattiness” that apply to the hon-maguro (bluefin), mebachi-maguro (big-eye) tunas and Meka (Striped Marlin). 

They are three major type of fattiness in tuna

Akami (lean), chutore (medium fatty) and otoro (high fatty) which is going melt like ice cream on the tongue.

 

All special will come premium cuts which are rare part of tuna like Kamatoro, taken form the jaw or sunazuri, premium fatty part of the bottom of the belly; low in quantity and considered a rare part of tuna with extraordinary amount of fat.

TUNA SUSHI GLOSSARY

Hon-maguro "참다랑어"

Blue fin are the most popular and  delicious tuna for sashimi and sushi.  They have perfect balance of fat and protein.

Mebachi-maguro "눈 다랑어":

Big Eyed are leaner compared to bluefin and tend to have top quality Akami.

Meka "황새치":

Striped Marlin is a different branch from tuna and they are popular for fatty belly part.

 

Akami "적신": 

The most common sushi tuna. Lean meat with a deep red color.

Otoro  "대뱃살":

Medium fatty part of the belly of the tuna.

Chutoro "중뱃살":

Extra fatty part of the belly of the tuna.

Sunazuri "배꼽살 ":

Premium fatty part of the bottom of the belly. A rare cut.

Kamatoro "아가미살":

Cut of tuna from the cheek of the fish. A rare cut.

Hohoniku "뽈살":

Cut of tuna from the back of the cheek. A rare cut.
